In 2010, Othman teamed up with his cousins, Nedal and Nizar Ahmad, to launch PINCHO in Miami, celebrating his mother’s Middle Eastern culinary roots. Born and raised in Brazil, Othman was inspired by his mother’s kebab dishes, which became a hit among his friends at cookouts. Using their life savings to build PINCHO, they achieved their American dream by sharing their flavorful heritage with the Miami community and delighting everyone with each juicy bite.
🍔 PINCHO made its way to Houston by popular demand
Driven by the enthusiastic demand from Texan tourists, PINCHO set its sights on Houston, recognizing the city’s diverse community and dynamic food scene as the perfect place to expand. In 2023, they proudly opened their first location in Cypress. Houstonians can now taste their unique flavors in Katy, Memorial City, Conroe, and Cypress.
🍔 Celebrate National Burger Month with PINCHO
With May being National Burger Month, we naturally asked Othman to teach us how to create award-winning burgers with the perfect sear. He stopping by the “Houston Life” studio at 1 p.m. today with Culinary Director Adrian Sanchez and their famous burgers, including a fresh vegetarian option. PINCHO uses Actual Veggies Black Bean Burgers because of their all-natural ingredient list that you can pronounce: carrots, pepper, parsnip, onion, and oat.
Sanchez joined PINCHO in 2012 and added his Cuban roots to the menu, which won the coveted Food Network People’s Choice Award at the 2015, 2019, and 2024 South Beach Wine & Food Festival Burger Bash.

🍔 Burger grilling tips PINCHO style
You don’t have to use a barbecue grill outdoors. There are benefits of using a griddle to get that perfect crip, especially if you favor the trendy smash burger.
Choose Your Beef! If using a griddle/flat top, go for a fattier meat. If you are grilling on an open flame, cut down the fat, for example, 85/15.
Always season the burger with salt and pepper first. Then, get creative with your favorite spices. For a smash burger, season before smashing.
YOFO or You only flip once! Let the burger sear well on one side before flipping.
If you’re smashing a burger on a flat top, get a good crust or caramelization on the outside of the beef first before flipping it.
If you’re making a smash burger, use a paint scraper to flip it to keep all of the caramelization from the patty when you flip it. That’s where the flavor is!
